Helping you tweak recipes when life requires a change

Grain Free Waffles

These awesome grain free, dairy free waffles are perfect for loading with berries for breakfast or a super delicious snack.

Grain Free

If ever you need a delicious grain free waffle, this is the recipe you want to use. It makes the yummiest waffles with a beautiful texture and delicious flavor.

Almond flour is high in fiber as well as protein. It is a moist flour and so it keeps gluten free items from being too dry. I use it often as part of the flour in almost every gluten free recipe I make.

Not Nut Free

If you are nut free, this might not be the best recipe for you to use.

I do have a grain free pancake recipe here that is made with cooked quinoa, buckwheat and almond flour. In the notes, there are directions for how to make it without the almond flour.

They are yummy and I think the batter would cook up well in a waffle iron too.

Toppings!

We love these topped with fruit and pure maple syrup. They are good with peanut butter and bananas as well or even unsweetened applesauce.

My daughter was on a very strict diet recently to figure out some health issues and was doing a fun date night activity with friends where they had a waffle bar. We made this dairy free ice cream for her with this waffle recipe and she felt like she still was able to be included with the group. It was a definite win!

Grain Free Waffles

3 eggs, separated

1/2 cup coconut milk (this is my prefered brand)

1/3 cup coconut oil

2 tablespoons honey

1 teaspoon vanilla

1 1/4 cup almond flour

1/4 cup tapioca flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

Directions

Separate the 3 eggs. Put the egg whites in a small bowl and the yolks in a medium sized bowl. Set the egg whites aside. To the yolk bowl, add the 1/2 c coconut milk, 1/3 c coconut oil, 2 T honey and 1 t vanilla. Stir to combine.

Add the 1 1/4 c almond flour, the 1/4 c tapioca flour, 1/2 t baking soda, 1 t baking powder and 1/2 t salt. Stir until just barely combined. A few streaks of flour in the batter is good.

Whip the egg whites until soft peaks form. (This is the hand held mixer I have – it is amazing!) Pour the egg whites onto the other ingredients. Gently fold in the egg whites. (If you are absolutely opposed to the separation of eggs and the whipping of egg whites – its ok! I have made this recipe without doing those steps and it still turns out good. The texture is definitely better with the whipped egg whites but the flavor is still yummy without it.)

Using a waffle iron, cook the waffles according to the directions. This is the waffle iron, I have and I love it. It makes four waffles at once which is wonderful at my house!

Top with favorite waffle toppings and enjoy!!
