This greek salad dressing is a hit at our house! It is simple, comes together quickly and uses everyday ingredients.
When it’s Good, it’s Good
I have been making this greek salad dressing for 12 years. In fact, about 6 years ago, I decided to look around for another recipe, just in case there was a better one out there. I found one with great reviews and so I made it and the reviewers were right, it was good.
I went to write it down in my recipe book and as I wrote it down I realized it was the exact same recipe I had before, just in smaller quantities. Ha! When it is good, it is good.

Variations for Less Oil
This one comes together quickly and uses spices you probably already have in your cupboard.
When my dad was doing a super low fat diet to address some heart concerns, I made him this recipe with all hummus and no oil.
The hummus does contain some oil but significantly less than just using straight oil. It was delicious. So if you need to use less oil check out the notes after the recipe for the details.

How to Serve it
We love to serve this greek salad dressing with falafel (here’s my favorite falafel recipe) and a greek salad and some whole grain, sourdough naan bread or pita bread. It makes for a scrumptious dinner.
It is also awesome to keep in the fridge for a quick greek inspired lunch – Greens, quinoa, garbanzo beans, chopped veggies and this dressing – Yum!

Greek Salad Dressing
1/4 cup extra virgin olive oil
1/4 cup hummus (see note)
1/3 cup red wine vinegar
1 1/2 teaspoons basil flakes
1 teaspoon garlic powder
1 teaspoon dijon mustard
3/4 teaspoon pepper
3/4 teaspoon salt
3/4 teaspoon onion powder
In a wide mouth jar or a small bowl, add all the ingredients. Next, stir, shake or use an immersion blender to combine everything. Serve! Can be made a couple days in advance. Store in the fridge where it will last a couple weeks.

Tweak It Notes
- Less Oil – I have made this dressing with all hummus and no additional oil, so 1/2 cup hummus and no cups oil :). It turns out great and decreases the oil percentage dramatically.
- Hummus – Over the years, I have used all different kinds of hummus – store bought or homemade – flavored ones or plain. It doesn’t seem to matter what kind, they all have been good. For convenience, often I buy the small 20 pack individual size hummus from Costco and I use one of the little 2.5 oz cups in this recipe. It works great.
