Have you eaten a cabbage roll? My mom made them on special occasions when I was younger and I always loved them! Her recipe came from her mother, who brought it with her from Spain. It is a special one.

Making actual cabbage rolls takes a lot of time, hence the special occasions time frame for making them. Cutting, rolling and forming the cabbage rolls is time-consuming and then the bake time is also lengthy. 

Easier Version for the Win


Years ago, I saw a recipe for a cabbage roll skillet, basically an unstuffed cabbage roll and I fell in love with the idea. Delicious, yummy food but half the work! Sign me up!

I have tweaked the recipe over the years to taste like my mom’s original cabbage roll recipe. 

How to Serve it


My mom always served her cabbage rolls over mashed potatoes with sauerkraut. That is how I always serve this cabbage roll skillet. It bulks up the meal and just tastes like home and goodness and fireplaces and love. Not exactly like that but you know what I mean – comfort food at its best!

This can also be served over rice, cauliflower rice, quinoa or even eaten on its own. It’s delicious however you serve it.

Cabbage Roll Skillet


1 pound ground beef (I prefer organic, grass fed)

1 large onion, chopped

2 cloves garlic, minced

1 small head of cabbage, chopped

1-14 oz can petite diced tomatoes

1-14 oz can tomato sauce

1/2 cup chicken broth

1/2 teaspoon pepper

1 teaspoon salt

1/4 teaspoon nutmeg

1/8 teaspoon cloves

Serve with: Mashed potatoes and sauerkraut or over rice

Directions

In a large skillet, brown the ground beef. Add the onion and garlic and cook until the onion is just beginning to become translucent.

Add the cabbage, diced tomatoes, tomato sauce, chicken broth and seasonings. Stir until combined. Let cook until the cabbage is soft and the flavors have melded together, about 8 minutes.

Remove from heat and serve as desired.

Tweak It Notes

  • Vegetarian – Skip the ground beef and use vegetable broth. You can use beans or quinoa in place of the meat, if you prefer.
