A quick, delicious waffle made to fill you up with the goodness of whole grains, flax, applesauce and sweet honey.
Breakfast is important!
I really like breakfast and I believe firmly in a wholesome, homemade breakfast as often as possible.

Wholegrain, sourdough, gluten free – oh my!
These whole grain waffles, fall under the wholesome, homemade breakfast. I love to make these whole grain sourdough waffles but sometimes I forget to prep stuff the night before or I am low on sourdough starter and in those cases I use this whole grain waffle recipe. It comes together quickly and is delicious!
I also have a great gluten free, dairy free pancake recipe that can be used as a waffle recipe as well. It’s yummy for those that need to be gluten free. Or todays recipe can be made with gluten free flour in place of the cup of whole grain flour. Also be sure your oat flour is gluten free.

More fiber, more vitamins, more minerals
Whole grains are such an important part of a healthy diet!
Fiber and higher amounts of vitamins and minerals make these waffles more filling.
Whole grains also don’t spike your blood sugar as easily as refined flours.

What you top your whole grain waffle with, makes or breaks this meal. Adding fresh fruit increases the fiber content of your breakfast and it sweetens the waffle without adding gobs of syrup.
We use pure maple syrup at our house or I make this buttermilk or apple syrup. I also really love topping my waffles with cinnamon applesauce. So delicious!

Whole Grain Waffles
1 cup whole grain flour (I typically do einkorn)
1 cup oat flour
1/2 cup flax meal
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons honey
1/2 cup applesauce
3 eggs – see note
1 3/4 cup coconut milk (or buttermilk)
Directions
Add flours, flax meal, baking powder and salt in a medium sized bowl.
Stir until combined.
Add honey, applesauce, eggs and coconut milk.
Stir until just barely combined. Do not overmix or the waffles will be rubbery.
Cook on a waffle iron according to manufacturer’s directions.
Enjoy warm with favorite toppings!
Can be frozen or stored in the fridge for 4-5 days.

Tweak It Notes
- WHOLESOME INGREDIENTS – I buy my whole grains, flax, honey, and coconut milk from Azure Standard. They typically have the best prices and a great variety.
- GLUTEN FREE – Swap the whole grain flour for gluten free flour. Be sure your oat flour is gluten free.
- EGG FREE – Leave out the eggs and add 9 tablespoons of water. The flax meal in the recipe does the work of the eggs for you.
