It’s a new year! Are you determined to eat healthier? No matter what your nutritional goals are, we can all benefit from more vegetables in our diet.
Each different color in those amazing vegetables, boasts a different range of vitamins and minerals. Vegetables carry important enzymes that help our bodies process the food we eat each day, not to mention a big boost of fiber that also aids with digestion.
A Few of Our Favorites
I love veggie heavy meals and often return to the same ones over and over again.
My kids love this Teriyaki chicken bowl from Mel’s Kitchen Cafe. It has cooked veggies, fresh veggies as well as fresh pineapple. Pineapple is also high in digestive enzymes, so that’s an added bonus. All that goodness is served over rice with a simple teriyaki chicken and sauce. I do our chicken in the instant pot instead of grilling it to make it less hands on.
Another favorite is this Roasted Veggies and Pasta dish. The veggies are roasted while the pasta cooks. Once those two components are added together you add some fresh tomatoes and a smattering of cheese. Yum!
This Black Bean and Quinoa Bake from Two Peas and Their Pod is also fantastic. Apart from the protein and fiber in the quinoa and beans, you get an added fiber boost with peppers, onions and corn and any fresh veggies you put on top. We love it topped with avocados and tomatoes.
Simple and Versatile
Todays recipe is another heavy veggie meal. It can be made completely vegan, if you want, by substituting the ground turkey with more chopped cauliflower and ground up pumpkin seeds.
This meal comes together pretty quickly. Cooking the rice takes the longest.
You can serve it with everything nestled inside a beautiful piece of bibb lettuce or you can serve it bowl style – where you add all your favorite ingredients into a bowl and eat it with a fork. However you serve it, just know you are getting a good dose of beautifully beneficial vegetables!
Asian Lettuce Wraps
Meat Mixture:
1 pound ground turkey
2 cups finely chopped cauliflower
1 large garlic clove, minced
2 tablespoons fish sauce
2 tablespoons soy sauce, coco aminos or tamari sauce
3 tablespoons lime juice
2 tablespoons honey
Sauce:
1/3 cup coco aminos, soy sauce or tamari sauce
1/3 cup honey or maple syrup
1/4 cup rice vinegar
1 teaspoon worcestershire sauce
1/3 cup water
1 1/2 tablespoon cornstarch
Serve with:
3 cups cooked rice
bib lettuce
shredded carrots, cucumbers, cabbage, etc
lime wedges
For the Meat Mixture:
In a medium frying pan add the ground turkey and break it apart in the pan. Cook for a few minutes over medium heat.
Add the chopped cauliflower. Stir the cauliflower into the ground turkey. Cook for 2-3 minutes, stirring occasionally.
Add the garlic. Cook until the turkey is no longer pink and the cauliflower has softened. Add the fish sauce, soy sauce, lime juice and honey. Stir to incorporate everything. Remove from heat and cover until ready to serve.
For the Sauce:
In a small saucepan, add all the sauce ingredients. Stir until the corn starch is fully incorporated. Place the saucepan over medium low heat. Bring the mixture to a low boil until the mixture thickens. Remove from heat.
To Serve:
Use one piece of bibb lettuce, place a scoop of rice, a scoop of the meat mixture, and then top with shredded veggies and sauce. Fold the lettuce over the filling and eat.
Alternatively, you can place rice and chopped lettuce in a bowl and top it with the meat mixture, the veggies and the sauce and eat it with a fork. Either way is delicious!
Tweak It Notes
- MEATLESS – This recipe can easily be made meatless. Simply sub two more cups of cauliflower for the ground turkey. You can also add chopped up pumpkin seeds to increase protein or some cooked quinoa.
