Somehow, even though these bars are grain free, dairy free, egg free and refined sugar free they still are delicious!

Chickpeas are Amazing!


These cookie bars are so simple and delicious. The texture is a little different than a normal cookie bar but we think they are equally yummy and so much healthier. 

The base of the dough is a can of chickpeas. Chickpeas are full of good fiber that can help with digestion. Fiber is also helpful for feeling fuller longer. 

In one can of chickpeas there is about 22-25 grams of protein and 15 grams of fiber, plus the protein and fiber in the peanut butter so for a cookie bar, these are pretty great!

Refined Sugar Free Chocolate Chips


I used the Hu chocolate brand semi-sweet chocolate chips in this recipe. They don’t have any refined sugar or dairy in them and I think they taste great.

Use what works best for your family’s needs.

To Dip or To Bake

Today’s recipe is very similar to this Healthy Cookie Dough Dip that we love and eat often.

In fact, this recipe could also be eaten as a dip instead of being baked (you know – no eggs and all!) but it is yummy baked and I like that it is a cookie bar made out of beans! So fun! Enjoy it however you love it best.

Chickpea Cookie Bars

Makes 1 – 8×8 pan

1-15 oz can of chickpeas, drained and rinsed

½ cup peanut butter (I use natural) or allergy friendly sub

⅓ cup pure maple syrup or honey

½ teaspoon salt

¼ teaspoon baking powder

¼ teaspoon baking soda

¼ – ⅓  cup chocolate chips (I used Hu brand semi sweet chips)

Preheat the oven to 350 degrees. Place all the ingredients in a food processor except the chocolate chips. Blend until smooth. Stir in the chocolate chips. 

Place parchment paper in an 8×8 pan. Carefully spread the batter into the pan. If desired, sprinkle a few extra chocolate chips over the top. 

Bake for 25-30 minutes, until the edges are just starting to brown and the middle is set. The inside may still be soft. That’s ok. It sets up more as it cools. Enjoy!
