Simple, quick and delicious syrup that perfectly tops loads of breakfast items, such as pancakes and waffles, or ice cream.
Inspiration Strikes
Sometimes you make something up and it turns out wonderful. Berry syrup is just one such lucky accident.
We had some syrup at a restaurant one time and it was so yummy and sticky and sweet. I was dreaming about it later on at home. It was the inspiration for this syrup.
This version is of course, pretty darn healthy as far as syrups go. It also comes together super quickly.
All the Berries
Berries are full of awesome antioxidants. They provide vitamins and fiber that all of us need.
This recipe is versatile because you can use any combo of berries that you want. I almost always use frozen berries because I always have them in my freezer but you can definitely use fresh berries as well.
On any given day, I have frozen blueberries, strawberries and cherries in my freezer and so that is what I always use in this syrup. A berry mix might work well, I just haven’t ever tried it so I can’t vouch for its deliciousness.
I use either maple syrup or honey to sweeten. Typically, I use maple syrup because the flavor of the honey comes through a little stronger in the final product. If your berries are super sweet you might need to adjust the amount of sweetener that you use.
Warm and Fresh is Best
I like to serve it warm and fresh but this syrup can be made ahead of time and reheated. When it cools it coagulates and so when you heat it, the texture is a little chunky. Still yummy, just not as smooth as when it is freshly made.
We like this syrup on pancakes, waffles and french toast but our favorite place is on cream of wheat. In the winter months, a bowl of warm cream of wheat, a drizzle of this syrup and some almond milk and breakfast is a slam dunk.
Berry Syrup
2 cups berries, frozen or fresh
¼ – ½ cup maple syrup or honey, depending on the sweetness of your berries
½ teaspoon vanilla, optional
Heat the berries in a pan. If they are frozen, you may need to add a tablespoon or two of water. Once the berries are warm, pour them into a blender. Add the sweetener and vanilla, if using. Blend until smooth. Serve over pancakes, waffles, french toast, ice cream or cream of wheat.
