Awesome garbanzo beans make up the base of this healthy cookie dough dip that is filling and sweet and delicious.

It’s A Good One

This recipe is a gem. I have been making it for many, many years. We often eat it for lunch because, it is made with chickpeas afterall.

It’s more like bean dip for apples, which sounds utterly terrible. I think I’ll keep the name Healthy Cookie Dough Dip – much more appealing.

This recipe comes from Chocolate Covered Katie, the healthy dessert blog. She has gobs of desserts that can be tweaked to fit your dietary needs.

The Secret Ingredient

The base of this awesome recipe is the unassuming chickpea or garbanzo bean. Garbanzo beans are full of dietary fiber which we all need for good digestion and protein for all our bodies building needs.

I prefer to soak my beans and cook them at home but you can use a canned variety for ease.

I will leave the decision up to you if you reveal the secrets of this dip to your taste testers. In all my years of making it, nobody has ever successfully guessed that it is made with chickpeas.

Fast With A Food Processor

This recipe comes together very quickly with a food processor. It is too thick for a blender but it can be made by hand with a chunkier result.

Everything, except the optional chocolate chips, gets tossed into the food processor and processed until smooth.

I remove it to a bowl and then you can either stir the chocolate chips in or just sprinkle some on top. We prefer to use mini chocolate chips.

If you need to be dairy or soy free, the Enjoy Life brand is great. Hu brand makes a chocolate chip sweetened with dates or coconut sugar.

Healthy Cookie Dough Dip

1 1/2 cups cooked chickpeas

1/8 teaspoon salt

1/8 teaspoon baking soda

1 teaspoon pure vanilla extract (optional)

1/4 cup peanut butter or alternative

¼ -½ C pure maple syrup (can use honey or coconut sugar)

3 tablespoons oats (ground flax will also work)

1-3 tablespoons milk –  only if needed

1/4 cup mini chocolate chips (optional)

Add all ingredients (except for chocolate chips) to a good food processor and blend until very smooth. Mix in the chocolate chips or sprinkle them on top, if desired. Serve with sliced apples. Store in the fridge. Lasts 3-4 days in the fridge.
