A delicious, simple meal full of wholesome potatoes, that is filling, hearty and doesn’t require tons of hands on time.

Elimination Diets


When we first did an elimination diet, I really struggled finding meals that my whole family could eat. Elimination diets are all about simplicity and sometimes get a little monotonous, ok a lot monotonous.

This meal was born when we were doing a second round of elimination. I knew my kids were fine with potatoes and peppers at that point and so I used them often. If you can’t eat potatoes or peppers, this is not the right dinner for you.

If you can eat potatoes and peppers, I hope you love it as much as we do. Its yummy, even when we aren’t on elimination diets, we eat it often. It is gluten free, dairy free, easy and delicious.

Time For To Do Lists Or Other More Important Things


This dinner is awesome because it requires the hands on time of chopping but then it goes in the oven and bakes while you do whatever else you have on your to-do list.

Or you know what, don’t look at your to-do list while it bakes. Sit and read, or play a game with your child or play a little diti on the piano, that sounds much better. That’s what I recommend.

Quality Ingredients is Where it’s At


I like organic potatoes and I prefer good quality sausage. Look for a sausage with ingredients that you can recognize. No nitrates or nitrites is another good thing to pay attention to.

I get the Aidells brand from Costco sometimes or Applegate brand is another good one. There are others out there as well. It’s worth it to take the time to find a good quality meat so you get all the good things your body needs and none of the garbage it doesn’t.

If you want it to be a meatless meal, you can leave out the sausage.

Sheet Pan Potatoes and Sausage


3 lbs potatoes, I used red and white but russet will also work

1 onion

2-3 garlic cloves

1/4 cup olive oil

1 teaspoon salt

1 teaspoon italian seasoning

½ teaspoon black pepper

½ teaspoon paprika

4 oz can green chili (sometimes I do 2 cans)

1 pound of good quality sausage

2 cups of chopped cabbage

salt and pepper to taste

Directions

Preheat the oven to 400 degrees. Scrub potatoes well, no need to peel them. Chop into roughly 1 inch cubes. Place in a large bowl.

Chop onion and garlic and add them to the bowl with the potatoes. Add the olive oil. Stir to coat the potatoes with the oil. Add salt, italian seasoning, pepper, and paprika. Stir again to coat them well.

Dump the potato mixture onto a sheet pan. Spread them out evenly. Put the pan into the preheated oven. Cook the potatoes for about 20 minutes.

While the potatoes cook, chop the sausage into half moon shapes and set aside on a plate. Chop the cabbage into square chunks and open the can of green chilies.

When the 20 minutes is up, remove the pan from the oven. Add the sausage, green chilies and cabbage. Stir everything together.

Put the pan back into the oven. Cook for another 10-20 minutes until the potatoes are soft. Remove from the oven and season with additional salt and pepper, if desired.

My kids like to eat this with ketchup. I like it plain. Leftovers are great with an egg or two for breakfast.
