Made by combining a few ingredients and then cooking the batter in a waffle iron for a delicious, quick treat.

A Little Nostalgic


Running in the door from school when I was a little girl to the smell of Mom’s waffle brownies, always perked me up. Waffle brownies were a quick delicious treat that my mom made on special occasions.

One year for Christmas, she made a big batch of these and decorated them with green, red and white frosting and sprinkles and gave them out to the neighbors. They turned out so festive! 

Quick and No Oven


These are a great treat for summer time because they don’t require the oven but they can be enjoyed year round.

I love to make them when teenagers are hanging out at my house because they come together quickly and they usually haven’t had anything like them before.

The oft-asked question is, “Why are your waffles brown?” After a quick bite, they don’t need any explanation. The trickiest part is keeping them on the plate long enough so everyone gets one!

We love them best warm out of the waffle maker but they are still good when they are cool. Make a fancy dessert with ice cream and hot fudge sauce on top!

Tweaking It, As Always


As with every recipe, I have tweaked this one over the years. I will give you my mom’s original recipe and then the one we use. This treat can be made healthier by using some whole grain flour or even just coconut sugar for the refined sugar.

I typically make them with einkorn flour or gluten free flour and some almond flour for moisture. Dairy free is also an easy swap. Coconut oil or dairy free butter both work great.

The Logistics


My waffle iron has four squares and it works perfectly to cook these babies up. I prefer to use my 2-tablespoon cookie scoop to portion them out but they really can be made whatever size you want.

If you find your brownies are sticking in your pan, turn your waffle maker on its side and let gravity help you pull them out. Be careful not to burn yourself or your countertop!

Mom’s Waffle Brownies


1 cube butter

7 tablespoons cocoa

4 eggs

1 3/4 cup white sugar

2 cups all purpose flour

½ teaspoon salt

1 teaspoon vanilla

In a medium size saucepan melt butter. Add cocoa and remove from heat. Stir until combined. Add the eggs, sugar, flour, salt and vanilla. Stir until just barely combined. Don’t over mix.

Heat waffle iron. If needed, grease it. Once iron is heated, use a 2 tablespoon cookie scoop to portion out the batter onto the iron. Cook according to waffle iron instructions. Mine cooks in about 30 seconds. Once waffle brownie is cooked through, remove carefully to a plate. Best served warm.

Here is our Families Version

1/2 cup coconut oil or dairy free butter

7 tablespoons cocoa or cacao powder

4 eggs

1 1/4 cup coconut sugar

1/2 cup maple syrup

1 1/2 cup gluten free flour or whole grain flour like Einkorn

1 cup almond flour

1/2 teaspoon salt

1 teaspoon vanilla

Follow same directions as above – these are a tiny bit more crumbly so be careful when removing them from the waffle iron – I turned the iron on its side so gravity would help as I removed them.
