Kristy’s Honey Dressing

I love a good, quick homemade dressing that encourages many greens to be eaten! This honey dressing does just that!

Memories Bring Back You

I have been making this dressing for about 18 years. After my husband and I had our second daughter, we met some neighbors that turned into life long friends – probably because she gifted me this delicious salad dressing recipe!

Everytime I make this recipe I can’t help but think about her, our friendship and my gratitude for years of love. In fact, now that I think about it, that is probably my favorite thing about sharing recipes. They tie us together because they help us remember each other as we eat yummy things!

“Life is really simple, but we insist on making it complicated.” Confucius

This recipe is fairly simple. I place all the ingredients in a wide mouth jar and use my immersion blender. However, it can also be made in a small blender or stirred or shaken really hard!

I have tried to make this dressing with extra virgin olive oil because that is my preferred oil but it has a very strong flavor in this recipe that I don’t love so I use light olive oil. You could probably use avocado oil as well but I have not tried it.

Health Benefits and Other Options

Honey is antibacterial, anti-inflammatory and is packed with antioxidants, vitamins and enzymes. Because it hasn’t been heated, raw honey is best. The heat can kill lots of the benefits of the honey.

Apple Cider Vinegar in dressings is helpful because it has beneficial acetic acid which can help manage blood sugar levels as well as aid in digestion.

The paprika is rich in carotenoids as well as capsaicin. And celery seed is also awesome. It is a natural diuretic as well as high in antioxidants.

If honey dressing is not your thing, I also have a ranch dressing, a chipotle lime dressing, a honey mustard dressing and a caesar dressing. All delicious!

Kristy’s Honey Dressing

2 tablespoon apple cider vinegar

½ cup light olive oil

⅓ cup honey (I prefer raw)

1 tablespoon lemon juice

½ teaspoon paprika

½ teaspoon mustard powder

½ teaspoon onion powder

½ teaspoon celery seed

½ teaspoon salt (more to taste)

Directions

Place all the ingredients in a wide mouth jar and blend with an immersion blender or shake really hard!

Alternatively, you can blend it in a small blender. Make it a few days in advance if needed.

We love it served with this Apple Pecan Salad! Yum!
