Mmmm…yummy! We love this blueberry banana concoction that has minimal added sweeteners and can easily be made dairy free.
Refreshing and Quick
I love a good refreshing treat that tastes delicious, is quick and doesn’t heat up the house. This little blueberry concoction is just that. I love to use wild blueberries in this treat because they blend up so easily. Plus, wild blueberries have higher antioxidants and fiber than regular blueberries. Pretty cool.
The bulk of this tasty dessert is fruit which means you get the benefit of the fiber in the fruit as well as the vitamins and minerals. The fruit is also naturally sweet which means you need a minimal amount of added sweeteners. A bonus all around!

Waiting is Hard
I have this ice cream maker and I do love it. I love making both this cashew chocolate ice cream and this vanilla cinnamon cashew version – so delicious! However, you have to wait for them to be completed and sometimes it is hard to wait!
This ice cream recipe today comes together very quickly. There is no waiting around for an ice cream machine to work its magic. Everything is thrown in a high powered blender and in a minute you have a delicious icecreamish concoction!

Dairy Free is Yummy Too
This recipe can be made with heavy cream. I prefer an organic variety that is not ultra pasteurized. Or you can use cashews to make it dairy free. Both versions are delicious in their own way.
I have also used coconut cream. The flavor of the coconut comes through strongly in this recipe and so if you love coconut flavor go for it. I was however, looking for the blueberry banana flavor to be the star and so I prefer either the cream or the cashew variety.

Instant Blueberry Banana Ice Cream
1 banana – not frozen
12 oz bag (or 1 1/2 cup) frozen wild blueberries
2 frozen bananas
1/2 cup organic cream or 1/2 cup raw cashews
2 tablespoons pure maple syrup or 4 soaked dates
water to blend
I like to soak my dates and cashews in clean clear water for at least 30 minutes before I make this recipe but it isn’t necessary, it just helps them blend better. Do what works best for you.
In the bottom of a high powered blender, add the ingredients in order. Put the non-frozen banana in first because it will turn into more “liquid” to help blend the ingredients. If you have a tamper, it may be very useful in this recipe. Don’t add too much water or your “ice cream” will turn into a smoothie. Still delicious just the wrong consistency.
Blend everything until smooth. If you have to stop and stir everything down a couple times, that’s ok. Serve immediately! So yummy!
