Breakfast is the Best
I love a good breakfast. I have more recipe posts about breakfast on this website than any other food category.
There is even have a whole post about breakfast here, if you need some inspiration. Healthy, filling, wholesome breakfasts make me so happy.

Loads of Zucchini
I love incorporating veggies into breakfast and this egg scramble has nourishing potatoes and zucchini. It gets a boost of flavor from the salsa and the eggs add a good amount of protein.
I have loads of zucchini from my garden right now and this recipe is a great way to use up some of it but I also love to use my abundance of zucchini in this chocolate zucchini bread.

Bulk It Up
If desired, you can bulk up this scramble with other chopped veggies or some meat. It would also be good served with chopped tomatoes or avocados sprinkled on the top.
This breakfast scramble can be eaten all by itself or it can also be rolled up in a tortilla for a delicious breakfast burrito.

Easy Breakfast Scramble
1 tablespoon extra virgin olive oil
2 cups shredded potatoes
2 cups shredded zucchini
10 eggs
¾ cup favorite red salsa
Salt and pepper
To a medium sized skillet, add the 1 T oil. Let heat over medium/low heat. Add the 2 c shredded potatoes and zucchini. Salt and pepper as desired. Cook, flipping until the edges of the potatoes and zucchini are starting to crisp.
Add the 10 eggs and 3/4 c salsa. Salt and pepper as desired. Stir in the eggs and salsa until everything is combined. Continue stirring and flipping until the eggs are cooked through.
Serve as is or with tomatoes and avocados or make a breakfast burrito by rolling this scramble up in a tortilla. Yum!
