Mmmm…yum! This dressing is a favorite! It has subtle chipotle flavor, sweetness from honey and a little zing of lime.
So Good on Lots of Things!
This Chipotle Lime Dressing recipe today is one of my favorites. It is so yummy on everything Mexican. I love it on this Southwest Salad recipe. It is really good on a Roasted veggie and Bean bowl. It’s yummy on a quick throw together salad for lunch.
In addition, it is fairly quick as well. I throw all the ingredients into a wide mouth pint size jar and use my immersion blender to blend everything together. Easy Peasy!

Canned Chipotle Chiles
I love to buy the jar of diced chipotle peppers. First off, it’s in a glass jar and not in a metal can and that’s awesome. Also, it is so quick to scoop out the desired amount and then the rest goes back into the fridge. It lasts for quite a while in the fridge as well so you can use it in multiple recipes before it goes bad.
Or, if you are afraid you won’t go through it quickly enough, I have frozen the leftovers as well. Scoop out what is left in your jar into a sandwich sized baggy, label it, date it and smash it all flat. When I need some delicious diced chipotle peppers later on, I can easily break off the amount I need and defrost that small amount because it is frozen so thin. It works like a charm!

Fresh is Best
I love using fresh ingredients but I also understand sometimes convenience outways fresh – like the jar of diced chipotle peppers above! The freshly squeezed lime juice is the best in this dressing but I’m sure bottled will work in a pinch.
I also always use fresh garlic cloves but if all you have is the jarred stuff it will probably be similar as well.

Chipotle Lime Dressing
3 tablespoons red wine vinegar
4 tablespoons fresh lime juice
3 tablespoons honey
⅔ cup light olive oil
½ teaspoon italian seasoning
¼ teaspoon cumin
1½ teaspoon salt
¼ teaspoon pepper
2 teaspoons diced chipotle peppers
2 small garlic cloves
Measure out all the ingredients into a wide mouth pint size jar. Use an immersion blender to blend it smooth. Enjoy!
